Ingredients
  • ½ cup Whole milk
  • 1 cup Sugar
  • ½ cup Melted ghee
  • 2 tbsps Cornstarch
  • ½ cup All-purpose flour
  • Few strands of saffron
  • Yellow food color (optional)
  • 4 drops Rose essence
  • Ground cardamom
  • Unsalted pistachios (thinly sliced)
  • Raw almonds (thinly sliced)
Instructions
  1. Cut 3 x 3 inch squares of wax paper for layering halwa.
  2. On a flat surface, grease 2 pieces of 2 feet long wax paper, with ghee.
  3. In a heavy bottomed non-stick deep frypan, combine milk, sugar, ghee, cornstarch and flour.
  4. Heat on medium until bubbling, reduce heat to low, continue stirring.
  5. Add saffron and essence and cook until doughy.
  6. The dough will begin to move with the spoon, it will also look glossy and airy.
  7. This process takes about 25 minutes.
  8. Empty dough onto prepared wax paper, work quickly.
  9. Spread as much as possible with a greased spatula.
  10. Cover with another greased wax paper and roll very thin with a rolling pin.
  11. Remove top paper, carefully sprinkle the garnish.
  12. Replace paper and gently roll again to press the garnish.
  13. Remove paper, let halwa cool slightly and cut 3 inch squares, do not lift.
  14. Let dry for about 5 hours.
  15. Lift and layer the halwa between wax paper squares and store.
  16. Variation: Just before the mixture becomes doughy, add a few drops of yellow food color to make yellow ice halwa.
